  4. Bloom the gelatin with water. Once bloomed, melt it a double broiler.
  5. Mix the chocolate ganache and sabayon together and put the gelatin then whisk or beat to incorporate properly the mixture.
  6. Put in ramekin containers, glasses or any mold you desire. Chill until set or overnight inside the chiller is much better result, garnish or decorate.

You'll melt the chocolate with some of the cream to create a soft ganache, whip more cream to soft peaks for garnishing, and then whip the rest to medium peaks for the mousse. Fold in the whipped cream and vanilla extract. Set over a saucepan of gently simmering water (do not let bowl touch water). Cook, whisking constantly, until mixture is. In a small heavy saucepan, whisk egg yolks, sugar and remaining water.
